BBQ Chicken, Strawberry Spinach Salad, and Veggie Kabewers

This, my friends, was my Very First Grilling Experience. As such there’s more than one picture, because I feel this is an important step in my cooking ventures. I have long been intimidated by grills, but after watching the Dearliest operate the propane grill a couple times, I felt like giving it a go.

I am now a fan of grilling. Next grilling attempt will involve salmon and a cedar plank.

BBQ Chicken Round #1

This was the first batch, marinated for several hours in the following marinade.

Ginger Teriyaki Marinade

1/3 cu soy sauce
1/3 cu water
3 T rice vinegar (white or apple cider works too)
2 t garlic, minced
1 T ginger, minced
sugar or honey to taste

1) combine all in bowl; refrigerate until ready to use

BBQ Chicken Round #2

Grilling with veggie kabewers. I basted the second batch of chicken with a homemade honey BBQ sauce. It was really. Really. Good.

Honey BBQ Sauce

1 cu honey
1/2 cu molasses
3 T ketchup
1/8 t ground cinnamon
1/2 t paprika
1/4 t fresh ginger (or dry equiv)
1/2 t salt
1/8 t black pepper
1/8 t dry oregano
1/4 t minced garlic (or dry equiv)
2 T Worcestershire sauce
1 T prepared mustard
1 t liquid smoke
2 t white vinegar (apple cider would work too)

1) combine all in blender and blend until smooth; refrigerate until ready to use

* For tonight’s dinner I made a half batch and it liberally basted 2 breasts and 5 drumsticks with plenty left over for future use.

Veggie Kabewers

Garlic Butter

1/2 cu (1 stick) butter
1/2 t garlic powder (or fresh equiv)
1/4 t salt
1/8 t pepper

1) place all in microwave safe dish or small saucepan and heat until butter is melted

Strawberry Spinach Salad

Easy enough. Spinach. Strawberries. Feta cheese. Absolutely wonderful with Balsamic Vinaigerette Dressing. One of my favorite summer salads.


Balsamic Vinaigrette Dressing

3/4 cu olive oil
1/2 cu Balsamic vinegar
1/2 t salt
1/8 t pepper
1/2 t dry oregano
1/2 t dry basil
1/2 t dry ground mustard

1) combine all ingredients, shake/stir well before each use
